Start with a salteña - a baked pastry filled with beef or chicken, potatoes, and a sweet-spicy sauce (locals treat it like a mid-morning ritual). Try peanut soup too; it’s rich and creamy with a surprising crunch from fries on top. And silpancho is another must, thin breaded meat over rice, topped with a fried egg! Yum.
