Northern India, including Delhi and Jaipur, favors rich, grain-heavy dishes influenced by the mountain cuisines of Tibet and the Mughal Empire. It's also a top-tier spot for dairy lovers—don't miss the butter chicken while you're there!

Vegetarians should definitely land in western India. Despite a lack of fresh produce, western Indian cuisine is extremely veggie-friendly, overloading on delicious lentils and legumes. Head to Mumbai to add some legendary street dishes to the mix.

Cities in southern India, like Bengaluru, Hyderabad, and Kochi, specialize in lighter, rice-based dishes thanks to their tropical climate. Spoil yourself with coconuts, plantains, and sweetbreads galore, all mixed with a heavy dose of spices. As an added bonus, there's terrific seafood to be found near the coast in Goa.

Finally, we have eastern India. The climate in places like Bengal is a lot rainier than most of the country, so there's plenty of fresh produce to be found here. Bengalis love to beat the heat with their food, so expect to find a ton of cooling yogurt dishes too. The real prize, however? Dessert :-)
