Surprisingly, it was the Qantas sale that tipped us off about this one!
Australia's flag carrier is having what they call a 'Sydney sale', with a few fares under £1000 rtn. We didn't think it was quite cheap enough for us to share, but it did get us digging around and voila! Enter, Cathay :-)
